片刃庖丁(右用)を研ぐ

Sharpen the blade knife (for right)

人口砥石を使用した場合です。

When using artificial grinding wheels.

1 研ぐ前に砥石を30分ぐらい水につけ、完全に水分を含ませます。含ます事により、庖丁の滑りが良くなります。
砥石は中砥石(#800〜1500)がきれいに研げます。
板の上に濡れた布を敷きます。こうすると砥石がぐらつかず板の上にしっかり固定されます。
家庭内流し台でも同じ様にしてください。
Before grinding, put the grinding stone in water for about 30 minutes so that it is completely moistened.
Inclusion of the knife improves the sliding of the knife.
The grinding wheel can be sharpened with a medium grinding stone (# 800-1500).
Place a wet cloth on the board. This ensures that the grindstone does not wobble and is firmly fixed on the plate.
Do the same for the domestic sink.
2 利き手でしっかり庖丁を持ち中指、薬指、小指の3本で柄を押え、人差し指は庖丁の峰、親指は庖丁のあごに添えます。片方の手で刃のある方を砥石に当て人差し指・中指・薬指を添えます。
角度は動かす向きに対して25〜30度。縦方向に往復します。

※砥石面は乾かないように少量の水をかけながら研いでください。
研いでいるときに出る泡状の液体は滑らかに研ぐために必要なので流さずそのまま研いでください。
Hold the kitchen knife firmly with your dominant hand, press the handle with the middle finger, ring finger, and little finger, and attach the index finger to the top of the kitchen knife and the thumb to the jaw of the kitchen knife. Place the index finger, middle finger, and ring finger on the grindstone with the sword in one hand. The angle is 25-30 degrees to the direction of movement. Go back and forth in the vertical direction.
※Please grind with a small amount of water so that the grinding wheel surface does not dry. The foamy liquid that comes out when sharpening is necessary for smooth sharpening.
3 研ぎ終えたら刃の裏側から親指の腹でかえり刃(刃の部分がザラッとした手触りになります)が刃の部分すべてに出ていたらOKです。庖丁を裏返し全体にかえりが無くなるまで研ぎます。庖丁は砥石に平らに押し付ける感じで。無くなったら完成です。
刃が爪に引っかかる状態なら刃がきちんとついている証拠。

※ここまでで十分なのですが、さらにキレイに研ぐ場合は仕上げ砥石(#3,000以上)を使い同じ要望で研ぎます。研磨面がさらにキレイになります。

研いだ後は砥石表面の汚れを洗い流し、水気を良く切って寒暖差の少ない所に保管して下さい。
Once sharpening is completed, it is OK if the burr blade (the blade portion becomes a rough touch) from the back side of the blade is exposed to all the blade portions. Turn the knife over and sharpen until there is no burr. The knife should be pressed flat against the grindstone. It is completion when it disappears.
Evidence that the blade is properly attached if the blade is caught on the nail.
This is enough, but if you want to sharpen more, finish Sharpen with the same demands using a grinding wheel (# 3,000 or more). The polished surface becomes even cleaner.
After sharpening, wash away the dirt on the surface of the grindstone, cut it well and store it in a place with little difference in temperature.

両刃庖丁を研ぐ

Sharpen double-edged knives

両刃の場合、片刃と違って刃を寝かさないように自分で角度を作らなくてはなりません。砥石から15度位浮かせ表から研ぎます。数往復したら裏返して数往復、カエリが出たら反対に変えるようにします。さらにキレイに研ぐ場合は仕上げ砥石を同じ方法で使用してください。

※庖丁の峰の下に10円玉2〜3枚挟むぐらいの角度で
In the case of double-edged blades, unlike single-edged blades, you have to make an angle by yourself not to lay the blade down. It is sharpened from the surface which is lifted about 15 degrees from the whetstone. When you make several round trips, turn it over and make several round trips. When Kaeri comes out, change it to the opposite way. If you want to sharpen more neatly, use the finishing whetstone in the same way.

①新聞紙がスパッと切れるとOKです。
②切れ味が悪ければ、再度、仕上げ研ぎからやり直します。
③切れ味が良ければ完了です。

(3) If it cuts well, it's done.

How to care and store knives

鋼(はがね)の庖丁は、よく切れますが手入れが良くないと錆びてきます。
①庖丁を使った後、熱湯をまんべんなくかけて乾燥しておくと錆びにくく、衛生的にも良いです。
②永く保管しておく時には、食用油を薄く塗って、新聞紙2~3重に巻いて、湿気の少ない、風通しの良い場所に保管してください。

A steel (Hagane) kitchen knife cuts well, but if it is not well treated it will rust.
(1) After using a kitchen knife, if you apply hot water evenly and dry it, it won't rust easily and is sanitary.
(2) When storing for a long period of time, apply a thin layer of cooking oil, wrap it in 2-3 layers of newspaper, and store it in a dry, well-ventilated place.

刃欠け修理

Blade chip repair

1 刃欠けの場合、欠けた部分が無くなるまで荒砥石(#80~#200)で40~45度の角度に立て研ぎ落とします。
又、裏押ししてかえりも取ります。これを交互にくり返します。
If the blade is chipped, grind it off at an angle of 40 ~ 45 degrees with rough abrasive (# 80 to # 200) until the chipped part disappears.
Also, remove the tail. This is repeated alternately.
2 刃欠けが無くなるとしのぎ線を切り刃を研いで上げていきます。この時以前のしのぎ角度に合わせて研いでください。 When the blade is no longer chipped, we cut the crease line and sharpen the blade. At this time, please sharpen according to the steeper angle.
3 切り刃を研ぎしのぎ線も上に上がると、中砥石(#800~#1500)で裏押しします。荒砥の研ぎ目が消え新しい刃裏が付いているか確認します。 After sharpening the cutting edge and lifting the line up, push it back with a medium abrasive (# 800 to # 1500). Make sure that the grind of the rough whetstone is removed and that there is a new blade back.

使用する砥石の種類荒砥石/中砥石/仕上砥石

荒砥石(#80〜#200)

刃が変形しているもの、又は、大きな刃かけ等、赤錆び、鎬(しのぎ)のないものを粗削りします。

Coarse whetstone
Roughly grinds those with deformed blades or those that do not have red rust or wrinkles (such as large blades).
中砥石(#800〜#1500)

荒研ぎの目を中砥石で研磨、荒研ぎ目を残さない事、研ぎ面を綺麗にすると錆びにくいです。

Medium whetstone
Polishing rough edges with a medium whetstone, leaving no rough edges, and making the sharpened surface harder to rust.
仕上砥石(#3000以上)

中砥石でできたわずかなキズまで取り除き、刃をさらに鋭くします。

Finishing whetstone
Remove even slight scratches made of medium whetstone and sharpen the blade.

※使用する砥石が平でない場合は、面直し砥石を使用

If the grindstone to be used is not flat, use a straightening grindstone.

材質で研ぎ方を変える

庖丁は主に鋼(はがね)かステンレス製のものが一般的です。鋼なら材質は細かな結晶の集合体なので仕上げ砥石まで行ってもいいですが、ステンレス製は材質が均一なので仕上げ砥石まで行うとツルツルになってしまい、刃の先端のギザギザがなくなってしまうので中砥石までにします。

Most kitchen knives are made of steel (Hagane) or stainless steel. In the case of steel, the material is a collection of fine crystals, so you can go to the finishing whetstone, but in the case of stainless steel, the material is uniform, so if you do it to the finishing whetstone, it will become smooth, and the jagged edge of the blade will be lost, so you should go to the middle whetstone.

砥石(手研用)の面直し調整

面直し砥石又はコンクリートブロックを用意する(1個)

Prepare a grinding wheel or concrete block (1 piece)

1 砥石が片減りしたり凹みができた時に、面直し砥石で砥石面を平らにする。平らでないと綺麗な刃は付きません。研ぐ時には力を入れ過ぎないようにする。形が変わってしまう場合があります。砥石が変形するまでに直したいものです。
砥石の上に庖丁を当てる時、注意すること。庖丁を縦ぎみに置くと、砥石面が綺麗にへり、砥石面も当たりが良く使いやすいです。
When the grindstone is chipped or dented, the surface of the grindstone is flattened by the surface repairing grindstone. If it's not flat, it won't have a clean blade. Don't apply too much force when sharpening. The shape may change. I want to fix it before the whetstone deforms.
Be careful when putting the knife on the grindstone. If you place the knife vertically, the surface of the grindstone will come off beautifully, and the surface of the grindstone will be smooth and easy to use.
2 ブロックを平らに動かないように固定して、その上に砥石面を置き水をかけながらこすりつける様に砥石を持ち、前後に動かし、砥石の凹みがなくなるまで研ぎます。 Fix the block so that it does not move flat, place the grindstone surface on it, hold the grindstone as if rubbing it with water, move it back and forth, and grind it until the indentation of the grindstone is gone.
